BEET AND PARMESAN ARUGULA SALAD

Ingredients
  • 1small baked beet
  • 1medium tomato
  • 2/3cup walnuts
  • 1tbsp honey
  • 1/3cup Parmesan cheese shavings
  • 3cups arugula
Salad dressing
  • 3tbsps olive oil
  • 2tbsps lemon juice
  • to taste salt and pepper
Instructions
  1. Start by toasting walnuts in a small sauce pan on medium heat for a few minutes. Once toasted, add honey, stir and set aside.
  2. Prepare the dressing by mixing the dressing ingredients together.
  3. Cut tomatoes and beets into thin wedges.
  4. Toss arugula, beets and tomatoes with salad dressing.
  5. Divide the salad between the plates and top with honey-walnuts and Parmesan shavings.
